Homemade Pretzels and Beer Cheese! 

       Chris and I have attempted to make homemade soft pretzels before and they were horrible. SO bad we almost didn't want to even attempt these, but I am so glad we did! This pretzels were fabulous, too good because they are already gone! 

      One of our local pizza places here in town serves pretzel bites with beer cheese that is fabulous... so we tried to recreate our own version. I found this recipe and recommend it to anyone who is looking for homemade pretzels!! 

      As you can tell from our picture below we did not make them into balls, instead we made pretzel sticks. The beer cheese on the other hand took awhile and it did not "wow" me enough to want to make it again. But if you love beer cheese you might as well try it the first time you make this recipe!

For the first PED post (aka Picky Eater Delights) I will be featuring three recipes I found online, Hummus Chicken, Grilled Sweet Potatoes, and Cheesy Orzo
1. Hummus Chicken 
Our chicken on top of our chopped zucchini and squash (pre-hummus slathering). Hubby did not eat the latter two, but I did and they were fantastic!

For the Hummus Chicken I opted to use two chicken breasts instead of the 4 it called for because mine were huge! As a result I did not use the entire cup of hummus but it still turned out perfect!

2. Grilled Sweet Potatoes

Chris had fun slicing these on the mandolin! 
Unfortunately the sweet potatoes were a little dry and therefore were not our favorite part of the meal. It was the first time we had grilled the sweet potatoes but it is something we are going to try again!

3. Cheesy Orzo

I do not have a great picture of the orzo, but what I can tell you is that is was creamy and yummy! Chris being a picky eater says he does not eat rice but if he eats orzo we may be one step closer!

The recipe calls for an entire box of orzo….you can easily cut the recipe in half if you want and still have leftovers! I also only used 1 tablespoon of light butter and only parmesan cheese because that is what I had on hand.

Overall the meal was a success! It was a light yet flavorful dish to add to our menu. The lemon hummus chicken with the cheesy orzo was a great pairing if I do say so myself.
